I swiped this Skinny Recipe from my cousin, Kelli Harmon, thank you Kelli!!!
Wash and cut a head of cauliflower into large chunks, heat a couple TBL spoons of oil in pan and add cauliflower. Cover. Cook about 20 mins.. Meanwhile in a blender add 2 eggs, 2 tsp of Italian seasoning, 1/2 cup of cornmeal. Purée all ingredients. Add cauliflower and continue to puree. Spread cauliflower puree on parchment paper bake until crust is slightly firm enough to add whatever pizza toppings you prefer. Bake at 450 until edges of crust are browned! 🙂 Enjoy.
