Grilled Pineapple Turkey Burgers

This tropical twist on your turkey burgers will leave your grill begging for more!

Ingredients:
20-oz package extra lean ground turkey
2 TB liquid aminos (such as Bragg)
¼ cup red bell pepper, chopped
¼ cup red onion, chopped
¼ tsp ground black pepper
1 tsp thyme seasoning
4 pineapple slices, approx 1/2 inch thick

How to Prepare
1. Preheat the grill to medium-high.
2. Combine ground turkey, liquid aminos, pepper, onion, black pepper, and thyme in large bowl and mix thoroughly until all ingredients are well distributed.
3. Divide turkey mixture into 4 equal portions and form into burger patties.
4. Put on a plate; grab the 4 pineapple slices and head to the grill.
5. Place the burgers and the pineapple slices on the grill (the pineapple will cook for the same amount of time as the burgers to soften up and get that yummy smoky flavor).
6. After approximately 8 minutes, flip the burgers and the pineapple slices (the underside should be nice and brown).
7. After approximately 4 minutes, place one pineapple slice onto the top of each burger.
8. Cook for an additional 3-5 minutes, or until burgers are cooked thoroughly and no longer pink in the center.
9. Turn off the grill. Using a long spatula, carefully remove the burgers from the grill (don’t lose those pineapples!) and onto a plate.
10. Eat ‘em up! Yum!! Enjoy

Paleo Pumpkin Protein Pancakes with a Light Maple Cream Pumpkin Glaze

Ingredients (10 pancakes, Serves 2)
 
Pancakes:
  • 1 scoop IT WORKS Profit Vanilla Protein Powder (buy here: https://wrapswithryann.myitworks.com/shop/category/#55)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice (use cinnamon if you don’t have any)
  • 1/4 cup ground golden flax
  • pinch salt
  • 1/2 cup pure pumpkin puree
  • 1/2 cup unsweetened milk (I used almond milk)
  • 3 eggs whites, beaten for a couple minute

Glaze Ingredients:

  • 1 Tbsp Plain unsweetened Greek Yogurt
  • 1 Tbsp pure Pumpkin puree
  • 1 Tbsp pure maple syrup
  • 1 Tbsp canned coconut milk (any unsweetened milk would be fine)
  • Dash of pumpkin pie spice and vanilla (optional)
Instructions
 
Pancakes:
Mix together all dry ingredients.
In a separate bowl combine pumpkin and milk until smooth.
Add wet ingredients to dry ingredients and full combine.
Put egg whites in your dirty pumpkin/milk bowl (to save on dishes) and beat until fluffy. Gently fold egg whites into batter.
Cook on low/medium heat until bubbling/browned on one side. About 2 minutes. Flip and cook other side.
Serve with Light Maple Cream Pumpkin Glaze. Top with unsweetened coconut flakes, pecans and/or banana’s.
 
Glaze:
Mix all ingredients together until smooth. Pour over pancakes.

Roasted Parmesan Garlic and Ranch Cauliflower

If you have given up (or want to give up) white potatoes then you will probably start buying more cauliflower. It works awesome as a replacement for mashed potato’s – such as in my twice baked mashed cauliflower recipe or cauliflower shepherd’s pie. But we have been eating a LOT of cauliflower and I wanted to try something different – so I roasted it. Good call Mama, good call!

This recipe is so easy. And I think the left-overs would be great in a salad. If you have any leftovers. Good luck with that. I did have to cheat a bit and use some Hidden Valley Ranch – okay – not 100% clean but only 4 tablespoons for a whole head of cauliflower. And I was low on time – and we all have to pick our battles. So feel free to make a home-made batch of ranch if you have the time. I will probably try this again one day without the bottled stuff and will let you know how it turns out. In the mean-time you can rest assured this is a great low-carbohydrate, clean”ish” way to get your veggies.

And it smelled incredible baking – hubby thought I was making garlic bread. Ha, ha, ha. No such luck my friend!

1 head cauliflower
2 Tbsp butter, melted
1/4 cup Ranch dressing
1 clove garlic
fine sea salt and pepper to taste
A light sprinkle of Parmesan cheese

Preheat oven to 350 degrees. Wash cauliflower and cut into florets. Melt butter in microwave and add Ranch and garlic. Mix thoroughly. Put cleaned cauliflower florets in a mixing bowl. Pour Ranch mixture over top and combine thoroughly so the dressing is well distributed. Put cauliflower in a 9 x 13 greased glass dish (I used EVOO to grease) and sprinkle with salt and pepper. Cook for 20 minutes and turn. Increase heat to 425 degrees and cook for an additional 10 minutes. Sprinkle with Parmesan cheese and bake for another 5 minutes. Serve. Yum. Yum.Yum.

I was baking something else at the same time hence the change in temperature. But it would likely work at whichever temperature – just adjust the length and keep an eye on it.
